At the beginning of the month, we welcomed Chef Aaron Chavarria as our new executive chef. He brings more than 15 years of international cuisine experience to the table, fusing the colorful spices and flavors from Florida, the Caribbean and Latin America.
Where are you from?
I’m from Nicaragua but I studied agricultural technical engineering in Germany and have worked all over the United States.
When did you develop a passion for cooking? When did you know you wanted to be a chef?
I started in my early years with my mom. Even though I’ve had years of training and a diverse culinary background, I still attribute everything I know about Latin/Spanish cuisine to my mother!
What’s your vision for the menus at Sundial? How do you plan to enhance the food and beverage experience at Sundial?
I am a great supporter of local farmers growing seasonally and sustainably. This is where my passion comes from – the food should be fresh, simple and delicious. I’ve learned that the most important part of providing an amazing dining experience involves listening to customers, getting their feedback and adapting to it.
