Sanibel, FL- The Sundial Beach Resort & Spa, voted Best Full Service Resort on Sanibel & Captiva Islands, is pleased to announce the addition of Aaron Chavarria as Executive Chef. Chef Chavarria will oversee the resort’s five dining venues and banquet dining.

The Nicaraguan-born, European-trained Chavarria studied agricultural engineering, learning the farm-to-table cycle and mastering the science behind fruits and vegetables. With a strong belief in sourcing local seafood and produce, he incorporates unexpected ingredients to create the right blend of texture and flavor in his innovative Floribbean cuisine.

“I am a great supporter of local farmers, seasonality and sustainability. This is where my passion comes from. Food should be fresh, simple and trendy, but the most important thing is for me to listen to our customers’ feedback and use it” said Chavarria.

Chavarria has worked alongside internationally regarded chefs, opened several restaurants, and has graced the pages of European magazines. His expertise has earned him accolades from Zagat and many others. Despite his extensive training and experience, he still credits his mother as his culinary inspiration.
