Shima Chef Sammy Wins Best of the Islands Award

Congratulations to Chef Sammy, who was recently named Best Chef during the Best of the Islands awards. Sammy is an icon at Shima Japanese Steakhouse & Sushi Bar. Get to know Sammy better and learn a little about what makes the best chef on Sanibel tick!

What is your favorite thing about working at Shima?

I really enjoy being able to interact with all of the guests. As a hibachi chef, I get to not only cook but also meet and have fun with our restaurant guests.

What was the first dish you ever learned to make?

My grandmother taught me how to make Chicken Curry when I was a child in Thailand. It was her specialty and one of my favorite dishes!

What inspired you to become a chef? How long have you been at it?

I have been a chef for 30 years. When I first came to the U. S. I visited a friend who was a hibachi chef. His boss took me under his wing. Not only did this teach me my craft, it was how I learned English. Later, I worked as a hibachi chef at Noopies, which was at Sundial years ago. After the restaurant closed I stayed with Sundial and, when Shima was created a year and a half ago, I went back to doing what I love!

What are some guest experiences that stand out?

We try hard to accommodate guests’ requests, whether it is a special order or a food sensitivity. When customers return, I remember their preferences and they seem to really appreciate the attention to detail and recognition.

What is your favorite hibachi trick?

I love the egg trick! It gets the guests involved and they become a part of the Shima experience.

I’d like to thank all of the people who have supported me through their votes and visits to Shima. Thanks for allowing me to cook for you!
