Island Fish Tacos Recipe

Pineapple Salsa:
- Pineapple, small diced 32oz
- Roasted red pepper, small diced 8oz
- Red onion, small diced 6oz
- Cilantro, chopped 4oz
- Jalapeno, minced 2oz
- Lime, juiced 1each
Directions:
- Mix all ingredients thoroughly and set aside for service
Avocado Cream:
- Avocado 1 each
- Sour cream 4 oz
- Salt and pepper to taste
Directions:
- Remove skin and pit from avocado, and mix all ingredients well.
Reserve for service
For the Tacos:
- Red snapper 6 oz
- Flour tortilla 3 each
- Pineapple salsa 3 oz
- Avocado cream 3 oz
- Cilantro leaves 2 oz
Directions:
- Cook red snapper until 145 degrees for 15 seconds
- Warm tortilla until pliable
- Place 2 ounces of snapper in each tortilla
- Top with 1 ounce of pineapple salsa over each taco
- Drizzle tacos with avocado cream
- Garnish with cilantro and enjoy!
